Sourdough

Healthy and gut-friendly, Sourdough is good bread.  Using the natural airborne bacteria all around us, the sourdough fermentation breaks down gluten proteins from 120,000 ppm (in regular bread) to ~100ppm.  Some gluten-sensitive individuals can eat sourdough but always consult your physician before consuming any bread.

Ingredients

Daily-Fed Starter

10% Ground Whole Wheat

Freshly ground in my kitchen

90% Blended Flours

I blend bakers and high-gluten flours free of bleach and bromine

Pink Himalayan Salt

Pink reminds me not to forget

Filtered Water

Filtered tap water to remove chemicals that affect the starter

After mixing, resting, stretching, folding, and shaping, the dough is placed in the the refrigerator for about 24 hours for the fermentation process to finish its work.

Scoring the dough just before baking is fun!
